The intricate relationship between diet and brain function highlights the potential of plant-based foods as key contributors to cognitive health. Phytonutrients play a crucial role in maintaining the chemical balance of the brain by influencing the function of inhibitory neurotransmitter receptors. Some of the significant phytochemicals are alkaloids, carotenoids, polyphenols, isoprenoids, phytosterols, saponins, dietary fibers, and certain polysaccharides. These bioactive compounds mitigate oxidative stress, support neurotransmission, and foster neurogenesis. Foods such as berries, nuts, seeds, legumes, and green leafy vegetables have demonstrated significant benefits in enhancing memory, learning, and overall brain performance. Antioxidants and omega-3 fatty acids further contribute to cognitive resilience by reducing inflammation and promoting neuronal function. Additionally, prebiotics and dietary fibers influence the gut-brain axis, emphasizing the role of gut microbiota in maintaining brain health. This chapter delves into the mechanisms and benefits of plant-based foods, offering insights into their role in promoting cognitive development and preventing neurodegenerative disorders.
